Best Fudge Brownies

Chocolate! Fudge! More Chocolate!~ Baked goodness! Delicious! Brownies! Chocolate has it’s health benefits, in moderation of course! If you’re looking for some chewy, fudgy yet crisp brownies. This will be the recipe that you’ll need to try! With summer on it’s way, you can never bake too much! Have a few friends over and enjoy these with some tea! Or you can always just save them all for yourself!

When it comes to baking I find it easier to use an electric scale to measure with. Instead of using so many measuring cups, bowls, and spoons you just have the one bowl. With an electric scale all you have to do is set your measuring unit, calibrate it, and ta-da! It’s ready for use! Set your bowl down and make sure to calibrate it back to zero with each and every ingredient. The next thing you know you’re pretty much all done! Just make sure when you’re mixing, don’t mix it on top of the scale! I’ve made the mistake of forgetting to remove the scale and having the bowl almost topple over!

Best Fudge Brownies

The measuring units are in grams (metric system).

Ingredients

  • 3/4 cup (175g) unsalted butter
  • 4 ounces (113g) semi-sweet chocolate bar, coarsely chopped
  • 2 cups (400g) granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (95g) unsweetened natural cocoa powder
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon salt
  • 1 and 1/4 cups (225g) semi-sweet chocolate chips

Materials

  • 23×23 cm (9x13in) square baking pan
  • Parchment paper (Baking paper) or aluminum foil
  • Whisk
  • Spatula
  • Mixing bowl
  • Electric scale

Steps

  1. Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan or line with aluminum foil or parchment paper, leaving an overhang on the sides to lift the finished brownies out. Set aside.
  2. In a microwave-safe bowl, combine the butter and 2 ounces of chopped chocolate. Melt in 30 second increments, whisking after each until it’s completely smooth.
  3. Whisk in the sugar until completely combined, then whisk in the eggs and vanilla. The batter will be light brown.
  4. Add the cocoa powder, flour, salt, remaining 2 ounces of chopped chocolate and the chocolate chips. Fold it all together with a rubber spatula or wooden spoon. Batter will be very thick, do NOT over mix. Over mixing the batter will make it very dense! Spread evenly into the prepared pan.
  5. Bake for 30-35 minutes, then test the brownies with a toothpick. Insert it into the center of the pan. If it comes out with wet batter, the brownies are not done. If there are only a few moist crumbs, the brownies are done. Keep checking every 2 minutes until you have moist crumbs. My brownies took about 33 minutes until it was done.

 

Let the brownie cool completely before cutting. Let the brownie cool down completely (an hour max) before cutting into slices, the longer the better I say! The cooling will help the brownie set and this will help give you a clean cut without the brownies crumbling apart. Trust me, this will help. Wanting to eat the brownies right away is very tempting! I too wanted to eat this right away!

Right after I had baked the brownies I left it for the whole day before cutting it into squares. Only because I went to the Coldplay concert! The almonds add a nice little crunch and texture inside the brownies. Unless you’re allergic to nuts, please omit those. I find that chocolate with a bit of nut or fruit always makes this brownie even better! Although I love chocolate I can’t have too much chocolate by itself, so if you’re like me and want to experiment add a bit of other things such as dried fruits or nuts.

After baking these, I ended up sharing it with my work colleagues. It disappeared within minutes! Trust me, it was that yummy!

Cover and store leftover brownies at room temperature for up to 1 week. Brownies freeze well up to 3 months. Thaw overnight in the refrigerator then bring to room temperature before serving.
